Method
Melt margarine in large saucepan over low heat. Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat and stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Gently stir in ham and eggs; heat through.
Serve over hot toast tips, toast cups, biscuits or fluffy rice. Serves 12.
Variations: omit dry mustard and ham and increase eggs to 10.
Omit dry mustard and ham; gently stir in 2 cans salmon, drained & flaked, or 2 cans tuna, drained.
Sprinkle top with one or the following: 8 slices bacon, cooked and crumbled 4 Tbsp cheese, shredded 4 Tbsp ripe olives, chopped .
