Method
Melt 3 Tbsp butter in saucepan; gradually add flour, stirring constantly. Gradually add milk; cook, stirring constantly until thick. Melt remaining 5 Tbsp butter in a skillet; sauté celery, onion, and green pepper; cook over medium heat until thick. Add to white sauce, mixing well. Place a layer of egg slices in a lightly greased half pan; pour half of the creamed mixture over eggs. Repeat layers. Sprinkle with breadcrumbs. Bake at 350 degrees F for 20-30 minutes.
