Method
Mix water, sugar (1 tsp), and yeast and let stand at least 3 minutes. Place in bowl of electric mixer along with sugar, egg whites, and 2 cups of bread flour. Beat for 5 minutes. Let stand 30 minutes.
Add ice, eggs yolks (5), bread flour and salt to mixer and knead for 5 minutes at low speed. Let rise 10 minutes. Add softened butter, mixing on low speed for 4 minutes. Let rise 30 minutes. Cover and place in refrigerator for 45 minutes. Punch down. Shape and use or refrigerate overnight.
To shape: Weigh dough into 2-ounce portions and roll into balls. Press (3) 2-oz balls together in baking rings on a greased cookie sheet. Let rise covered for two hours in warm place. Brush with remaining beaten egg.
Bake in preheated 350-degree F. oven for 30 minutes or until deep golden brown.
