Crunchy French Apple Pie

Crunchy French Apple Pie

Serves: 8

Ingredients
5 cups sliced and pared tart apples
1-1/4 tsp ground cinnamon
1/4 tsp nutmeg
1 cup sugar
1/2 cup biscuit baking mix
3/4 cup milk
2 eggs
2 Tbsp margarine or butter, softened
1 cup biscuit baking mix
3/4 cup chopped roasted peanuts
1/3 cup packed brown sugar
3 Tbsp margarine or butter

Method
Filling (first 8 ingredients): mix apples, cinnamon, and nutmeg and turn into pie plate. Beat next 5 ingredients in a blender on high for 15 seconds or with a hand beater for 1 minute until smooth. Pour into plate.  Sprinkle with Streusel. Bake 50-60 minutes in preheated 325 degree F oven or until knife inserted in center comes out clean.
 
Streusel (remaining 4 ingredients): In a medium bowl, mix biscuit baking mix, peanuts, brown sugar and margarine or butter until crumbly.
