Crunchy Zucchini and Tomatoes

Method
Blanch zucchini with boiling water for 1 minute; drain. Melt margarine; add onion and garlic. Sauté on medium heat. Heat 1 minute. Add zucchini; cook, covered 2 minutes. Add tomatoes; cook, covered, 30 seconds. Season with salt and pepper. Add sesame seeds and parsley. Toss gently.
