Method
Spray large skillet with nonstick spray. Cook potatoes, bell pepper and onion in skillet over medium heat, stirring occasionally until tender. Stir in chili powder. Remove from skillet; keep warm.
Melt margarine in same skillet. Cook eggs over medium heat until set but still moist.
Spread beans, potato mixture, eggs, tomato and salsa in center of each tortilla. Fold tortilla around filling. Serve immediately with sour cream, guacamole, or additional salsa and shredded cheese.
