Ingredients
4-1/2 lbs Lamb-Weston Original or Thick CrissCuts
3 qts eggs, lightly beaten
Salsa, for garnish
Cilantro, for garnish
Orange slices, for garnish
Method
Fry CrissCuts according to package directions until golden brown and crisp. Remove fries from fryer; transfer to hot grill, spreading evenly in one layer. Pour egg mixture over fries. Turn eggs gently with potatoes to desired doneness.
Plate Presentation: transfer eggs to single serving plates; garnish as desired.
