Eggs N Chips Casserole
Serves:

Ingredients
16 eggs, hardcooked, chopped
3 cups celery, diced
1/2 cup walnuts, chopped
4 Tbsp green pepper, minced
2 tsp onion, minced
1 tsp salt
1/2 tsp pepper
1-1/3 cups mayonnaise
2 cups cheddar cheese, shredded
2 cups potato chips, crushed
Method
Combine eggs, celery, walnuts, green pepper, onion, salt, pepper and mayonnaise. Toss lightly, but mix thoroughly. Place in a greased half pan.
Sprinkle with shredded cheese and top with potato chips. Bake at 375 degrees F for 25 minutes.
Yields: 12 servings.
