8 Signature Fresh Eggs, large
4 English muffins, toasted and split
8 slices Canadian bacon, broiled or pan fried
Hollandaise Sauce Mustard Sauce

Method
Poach eggs.
 
To serve, top each muffin-half with 1 slice of bacon, 1 poached egg, and 1 Tbsp of hollandaise or mustard sauce.
