Fiesta Calzones

Ingredients
1-1/2 qt ground beef, lean
2 lbs onions, chopped
2 cups Chili powder
2 (50 oz) cans Campbell's Condensed Tomato Soup
2 qts Monterey Jack cheese, shredded
25 lbs frozen bread dough, thawed

Method
In large saucepot cook beef, onions and chili powder. Cook until internal temeperature is 160 degrees F or higher for 15 seconds and beef is browned. Drain fat. Add soup and cheese. Heat until internal temperature is 140 degrees F or higher for 15 seconds, stirring occasionally. Preheat oven to 350 degrees F. Portion dough into 100 pieces (4 ounce each). Roll each piece into 6-inch circle. Using No. 8 scoop (about 1/2 cup) place meat mixture on dough. Fold dough in half over meat. Pinch edges together. Place 10 calzones on each oiled sheet pan. Bake until internal temperature is 140 degrees F or higher for 15 seconds and calzones are browned, about 20 minutes. Hold at 140 degrees F or higher. Portion 1 calzone. Serve with Pacer Thick & Chunky Salsa for dipping if deisred.
