Method
Place flank steak in a large shallow dish. Combine 1 Tbsp plus 1 tsp oil, garlic and wine in a measuring cup and pour over steak. Marinate at least 30 minutes.
Combine 3-1/2 Tbsp oil, cilantro, onion and salt and pepper to taste in a food processor or blender. Process until smooth. Let sit about 30 minutes at room temperature. Remove steak from marinade, discarding marinade. Grill about 5 minutes. Turn steak and grill another 4-5 minutes for rare.
Slice against the grain diagonally. Serve steak slices on warm pita bread. Pour cilantro sauce over steak.
