Flourless Chocolate Cake

Flourless Chocolate Cake
Jazz up dessert trays with the richness of a chocolate cake. Serve as a stand alone item, warm with a scoop of ice cream, or topped with a fruit sauce, such as Raspberry Glaze.

Ingredients
14 oz semi-sweet chocolate
1-2/3 cups granulated sugar
10 oz unsalted butter
3/4 cup brewed espresso or strong coffee
6 Signature Fresh Eggs, large

Method
Preheat oven to 250 degrees F. Place chocolate, sugar, butter, and espresso (or coffee) together in pan and heat until mixture has melted together and is smooth. Remove from heat and let cool slightly. In a separate bowl, beat eggs until well mixed. Add eggs to cooled chocolate mixture, beating constantly. Pour mixture into greased 10 x 3 inch springfoam cake pan. Bake 2 hours and serve.
