Method
This delicious condiment combines the soft crunch of walnuts with fresh peaches in a sweet yet tangy base.
In a two quarter sauce pan, combine sugar, vinegar, mustard seeds, curry powder, salt, and red pepper flakes. Bring to boil, stir to dissolve sugar. Simmer three minutes. Add bell peppers and onions; simmer three minutes.
Meanwhile, pit peaches and cut into 3/4-inch dice. Cool vinegar mixture slightly. Mix in peaches and walnuts. Cover and chill. Excellent with grilled chicken or ham.
Yields: approximately 2-1/2 cups.
