Fruit and Nut Baked Yams

Ingredients
3 cans Signature Yams
3 qts Signature Apricot Halves
1/3 cup lemon juice
3 cups brown sugar, light
1 Tbsp cinnamon, ground
1 Tbsp pumpkin pie spice
1 Tbsp orange extract
1-1/2 qts walnuts, chopped
3/4 cup margarine, melted

Method
Drain yams and place in a 12" x 2.5" x 20" well oiled pan. Mix apricot halves with lemon juice and arrange on top of yams. Combine brown sugar, cinnamon, spice, extract, walnuts, and margarine. Sprinkle over yams and bake uncovered at 350 degrees F for 25-30 minutes.
