Game Hens Florentine

Game Hens Florentine

Ingredients
1/4 cup onion, chopped
1 Tbsp garlic, minced
1/2 cup butter
1/2 cup sour cream
3 oz cream cheese, cubed
2 (10 oz) pkgs spinach, chopped, thawed, and well drained
1 cup feta cheese, crumbled
1/4 cup parsley, minced
2 Tbsp green onion, slices
1 tsp red pepper flakes
6 Cornish Game Hens, 1-1/2 lbs each, cleaned
2 tsp paprika
2 tsp salt

Method
Sauté onions and garlic in 1/4 cup butter. Add sour cream and cream cheese; cook until cream cheese is melted. Add spinach, feta cheese, parsley, green onion and 1/4 tsp red pepper flakes; mix well. Place 1/2 cup spinach mixture in each hen. Place hens on 15 x 10 x 1 inch pan. Brush with remaining melted butter. Sprinkle with combined paprika, pepper, salt and remaining red pepper flakes. Bake at 375 degrees F for 50 to 60 minutes or until tender.
