Method
Add potato slices to boiling, salted water. Total time including simmer: 8 minutes. Drain and let rest for 2 minutes.
Fry until crisp, remove bacon, reserve drippings. Sauté onion and celery in bacon drippings.
Combine stock, vinegar, and seasoning in large skillet. Bring to a boil, turn off heat, add potato slices, bacon, sautéed onion, and celery. Gently combine.
Garnish with chopped parsley and chives. Serve warm. Can be used cold, if desired.
Option: finely chop 1 dill pickle and combine with ingredients.
