Ginger Almond Crusted Alaska Salmon with Asian Pesto

Ingredients

4 (7 oz each) Alaska Salmon fillets
2 Tbsp honey
1 Tbsp soy sauce
2 Tbsp lime juice
2 Tbsp green onion, thinly sliced
1 tsp garlic, finely chopped
1/4 cup almonds, sliced

Asian Pesto
1/2 cup basil leaves
1/2 cup cilantro leaves
1/2 cup mint leaves
1/4 cup pine nuts
2 tsp lemon grass, finely chopped
1 tsp red chile paste
2 Tbsp lime juice
2 Tbsp soy sauce
3/4 cup peanut oil
1/4 cup sesame oil

Method

To prepare Asian Pesto, combine basil, cilantro, mint, pine nuts, lemon grass and chile paste in blender or food processor; process until smooth.

Add lime juice and soy sauce; process until blended. With motor running, gradually add oils in slow steady stream to emulsify; set aside.

In small bowl, combine honey, soy sauce, lime juice, ginger, green onion and garlic; mix well.

For each serving, brush salmon fillet with honey mixture; sprinkle with 1 tablespoon almonds. Place fillet in pan and roast in 350 degree F oven 9 to 12 minutes or until cooked through.

Pool pesto in center of warmed dinner plate. Arrange salmon over pesto on plate.
