Ginger-Pineapple Salsa

Ginger-Pineapple Salsa

Serves: 4-6

Ingredients

3 Tbsp olive oil
1 chipolte pepper
1 tsp garlic
2 tsp gingerroot
1/2 tsp saffron
1/2 red bell pepper
1/2 red onion
1 pineapple
3 Tbsp lime juice
1/4 cup pineapple juice

Method

Mince the chipotle, garlic, gingerroot, and add the olive oil and saffron. Chop the red pepper and red onion. Cut the pineapple into 1/2 inch triangles and mix in all the ingredients. Let sit for an hour or more before serving. This will hold in the refrigerator for three to four days.
