Gnocchi Pasta with Chicken Sun Dried Tomatoes and Nuts

Gnocchi Pasta w/Chicken, Sun-Dried Tomatoes & Nuts

Ingredients

16 oz Dakota Growers Gnocchi Pasta
3 oz sun-dried tomatoes
1 Tbsp olive oil
2 garlic cloves, minced
2 cups cooked chicken, cubed
1/2 cup chopped fresh basil
1/2 cup chicken broth
6 oz Kalamata olives, sliced
3 oz Gorgonzola cheese, crumbled
Salt and Pepper, to taste
1/4 cup pine nuts, toasted

Method

Cook gnocchi according to package directions; rinse in cold water and drain well.

Soak sun-dried tomatoes in water.

Meanwhile, heat olive oil in large saute pan over medium-high heat. Add garlic and saute 1 minute. Add sun-dried tomatoes, chicken, basil, broth, cheese and Kalamata olives and bring to a boil. Season to taste with salt and pepper.

Add sauce to pasta and toss to coat. Top with pine nuts and serve.
