Greek Style Olives

Greek Style Olives
Marinated colossal olives stuffed with a Feta cheese mixture of herbs and spices. Great for catered events. 

Serves: 24

Ingredients
48 whole, pitted jumbo or colossal California Ripe Olives
4 oz Feta cheese
1 cup olive oil
1/3 cup lemon juice
1 Tbsp finely chopped fresh oregano or 1 tsp dried oregano
1 Tbsp finely chopped fresh rosemary or 1 tsp dried rosemary, crushed
Fresh ground pepper, to taste

Method
Stuff the olives with crumbled feta cheese. 
 
Beat together olive oil, lemon juice, oregano, rosemary and pepper. Marinate stuffed olives in mixture for 4-6 hours. Drain and serve with toothpicks. 
 
Yield: 24 servings.
