Greek Style Tomato Salsa

Greek Style Tomato Salsa

Serves: 2-1/2 cups

Ingredients
1 lb (2 large) fresh California tomatoes, seeded and diced
1/2 cup seeded and diced cucumber
1/4 cup chopped red onion
1 can (2.5 oz) sliced ripe olives
2 Tbsp finely chopped parsley
2 Tbsp lemon juice
1 garlic clove, chopped finely
1 tsp chopped fresh rosemary or 1/2 tsp dried rosemary
1/8 tsp each of salt and pepper
1/2 Tbsp olive oil
1/2 cup crumbled feta cheese

Method

In medium bowl, combine California tomatoes, cucumber, red onion, olives and parsley; set aside.

In a small bowl, combine lemon juice, garlic, rosemary, salt and pepper. Whisk in olive oil. Gently mix dressing with tomato mixture. Sprinkle with feta cheese. Serve with grilled steak, lamb chops and sandwiches.
