Grilled Chicken Penne Salad

Grilled Chicken Penne Salad

Ingredients
1 Tbsp garlic salt
1 Tbsp oregano leaves, dried, crushed
1/2 tsp ground red pepper
4 lbs chicken breast halves, boneless, skinless
4 each yellow and orange bell peppers
2 lbs penne pasta, cooked, drained, chilled
2-1/2 qts baby spinach leaves
3 cups California ripe olives, whole, pitted
2 cups sun dried tomatoes packed in oil, drained, slivered
Creamy Garlicky Dressing:
2 cups mayonnaise
1 cup sour cream
1/4 cup milk
1/4 cup olive oil
1/4 cup Italian parsley, minced
1/4 cup white vinegar
1 Tbsp fresh cracked black pepper
1 tsp mustard, dry
3 garlic cloves, pressed
1/2 tsp salt

Method

Combine seasonings; sprinkle over chicken. Grill chicken and peppers over medium-hot coals until peppers are tender and chicken is done. Slice chicken and peppers. Toss together pasta, spinach, olives, tomatoes, chicken and peppers. Portion onto serving plates.

Garlicky Dressing: Blend together all ingredients.
