Grilled Steak Sandwich with Salsa Spread

Grilled Steak Sandwich with Salsa Spread
Pepper-rubbed, thinly sliced steak stacked on grilled sourdough with lettuce and a salsa spread.

Ingredients

Salsa Spread
1-3/4 cups mayonnaise
1 cup salsa, prepared, drained
2 oz green onions, sliced
2 Tbsp cilantro, minced
24 slices sourdough or Italian bread, 1-inch thick slices
1-1/2 lbs Iceberg lettuce
9 lbs Flank steak
2 Tbsp cracked black pepper

Method

Make Salsa Spread: Combine mayonnaise, salsa, green onions and cilantro; mix thoroughly. Cover and refrigerate until ready to use. Yield: 3 cups.


For each serving: Spread 1 side of bread slice with 1-ounce ladle of Salsa Spread. Plate and top with 1-ounce lettuce.

Coat both sides of 1 steak with pepper. Grill to desired doneness, turning once. Thinly slice steak across the grain. Arrange 4-1/2 ounces of steak slices over lettuce.
