Guacamole
A dollop of guacamole can enhance any Mexican entrée.

Ingredients
4 avocados
2 Tbsp lemon juice
2/3 cup mayonnaise
1/2 cup onion, finely chopped
1 tomato, coarsely chopped
1/2 tsp minced garlic
1/2 tsp chili powder
3 Tbsp hot sauce
Method
Peel avocados and mash with lemon juice until smooth. Add remaining ingredients. Chill. Best served within 24 hours.
Makes 1 quart.
