Method
Cook bacon until crisp; remove from skillet. Cook potatoes in bacon drippings over low heat until they begin to brown. Combine eggs, milk, salt and pepper, pour over potatoes. Sprinkle bacon, onions, and other vegetables on top of egg mixture. Cover and cook on low heat for about 15 minutes or until set. Top with cheese and cover pan until cheese melts. Slice and serve. Sausage or ham may be used instead of bacon.
