Ingredients
7-1/2 qts water
2-1/2 qts coconut milk
1 cup brown sugar
12-1/2 lbs white rice, short grain
12-1/2 lbs Signature Peas and Carrots, frozen
2-1/2 cups mint, chopped
Method
In a large pot, combine water, coconut milk and brown sugar.
Heat to boil and add rice; cover, turn heat down and cook 15 minutes.
Uncover rice; add peas and carrots and mint; gently stir and cover to cook and additional 5 minutes. Serve.
