Hot and Sour Shrimp Soup

Hot and Sour Shrimp Soup
Spicy chili pepper and a tangy sweet and sour base combine with shrimp to produce a savory hot soup.

Ingredients
8 oz shrimp in shells
2 Tbsp sesame oil
3 cups water
1 oz chicken base
2 Tbsp sweet and sour base
2 cloves garlic, minced
1 Tbsp ginger, minced
3 shallots, thinly sliced
1/2 cup straw mushrooms
2 Tbsp rice vinegar
1/4 cup lime juice
2 Tbsp cilantro, whole leaves, rinsed
1 tsp Thai chili pepper, minced

Method
Shell, de-vein, and clean shrimp; clean and reserve shells. Place shells in a large pot with sesame oil.
 
Cook shells for 3 minutes until they change color; add water and simmer for 15 minutes. Remove shells; reserve water.
 
Add chicken base to water, sweet and sour sauce, garlic, ginger, shallots, and mushrooms. Adjust taste with additional water, if needed. Gently simmer 5 to 10 minutes.
 
Add shrimp and cook to tender. Finish soup when serving with remaining ingredients.
