Ice Shrimp Sate Noodle Salad

Ingredients
5 lbs Ice Shrimp
3 cups Sate sauce (recipe below)
3 cups sugar snap peas or snow peas, blanched
3 cups Signature baby corn, canned, drained, and rinsed well
3 lbs lo mein noodles, cooked and cooled
2 cups peanut butter, natural
1/2 cup cilantro leaves, loosely packed
1/2 cup lime juice
1 bunch scallions, chopped
8 oz coconut milk
1/2 cup soy sauce
2 Tbsp ground coriander
2 tsp cayenne pepper
1/2 cup honey
1/4 cup fresh chopped ginger
1 Tbsp ground cumin

Method
Rinse shrimp to thaw and drain well. Combine with first five ingredients and chill.
 
Serve on mixed greens garnished with toasted coconut, sesame seeds, and thinly sliced red pepper.
 
Preparation of Sate sauce: Combine remaining ingredients in a blender or food processor using the steel blade, until smooth. Water may be added to adjust the consistency.
