Independence Parfait

Independence Parfait
This patriotic dessert is beautiful and luscious, celebrating summer in all its glory. It's sheer berries from top to bottom, layered with creamy clouds of parfait cream.

Serves: 8

Ingredients
8 oz cream cheese, at room temp
1 cup whipping cream
1 to 2 tsp fresh lemon juice
1 pt fresh blueberries, lightly sprinkled with sugar
1 pt fresh raspberries, lightly sprinkled with sugar
Fresh mint leaves or lemon balm for garnish

Method
In a medium bowl, whip the cream cheese and powdered sugar. Slowly add whipping cream a little at a time and beat until the cream is incorporated and mixture is fluffy. Add lemon juice, to taste.
 
To assemble parfaits: Use parfait glasses, tall wine glasses or champagne flutes. Spoon 1" of blueberries into glass, top with a dollop of cream then spoon 1" of raspberries on top, followed by another dollop of cream.
 
Spoon another layer of blueberries, another dollop of cream and top the parfait with a spoonful of raspberries. Garnish with mint or lemon balm.
