Irish Potato Pie

Ingredients
1/2 cup shredded potatoes
1-3/4 cup milk
1/2 cup Easy Eggs
1/2 cup sugar
1 cup butter
1/2 tsp salt
1/2 tsp nutmeg
1/2 cup coconut
1 tsp vanilla
(1) 9" unbaked pie shell
Method
Heat potatoes in milk on top of double-broiler; add butter and cool.
Combine eggs with remaining ingredients and add to milk mixture. Pour into pie shell and bake at 375 degrees F, for 35 minutes or until set.
