Irish Raisin Soda Bread

Irish Raisin Soda Bread
The addition of applesauce adds a smooth, light texture a delicious traditional Irish bread.

Ingredients
2-1/2 cups bread flour
1-1/2 tsp baking powder
1/2 tsp baking soda
2 Tbsp honey
3/4 cup plain non-fat yogurt
1/4 cup unsweetened applesauce
1 large egg, lightly beaten
1/2 cup raisins

Method
Preheat oven to 375 degrees F. Coat a baking sheet with nonstick cooking spray. Sift together flour, baking powder, and soda. Add raisins. Set aside.
 
Combine honey, yogurt, applesauce, and beaten egg. Beat well; add to flour mixture and stir until just mixed. Knead 1 minute. Divide dough into 4 equal pieces and shape into rounds.
 
Make an "X" in the top of each with a sharp, floured knife and place on prepared baking sheets. Bake 35-40 minutes or until golden. Cool completely before slicing.
