Italian Appetizer Plate

Italian Appetizer Plate
Spicy breast tenderloins served with mozzarella, vegetables and pizza dipping sauce. Perfect for late-night appetizers.

Serves: 10

Ingredients
30 pieces Tyson Spicy Breast Tenderloins
2-1/2 cups commercial pizza sauce
1 Tbsp Italian seasoning blend
10 pieces green leaf lettuce leaves
60 strips red bell peppers, roasted, cut in strips
50 black olives, whole, pitted
30 cubes mozzarella cheese, cut in 3/4" cubes
20 halves artichoke hearts, marinated, drained, halved
Parsley, minced

Method
Cook tenderloins in fryer at 350 degrees F for 3 to 5 minutes.  Remove from fryer. Drain; keep warm. Combine the next 2 ingredients in a saucepan. Mix well. Heat over low heat for 5 to 6 minutes, or until fully warm. Remove from heat. Keep warm.
 
To assemble appetizer plates, on lettuce leaves, arrange 6 red bell pepper strips, 5 black olives, 3 mozzarella cubes, and 2 artichoke halves on each plate. Sprinkle with minced parsley.
 
Add 3 breast tenderloins and serve with 1/4 cup pizza sauce.
