Method
Cook tenderloins in fryer at 350 degrees F for 3 to 5 minutes. Remove from fryer. Drain; keep warm. Combine the next 2 ingredients in a saucepan. Mix well. Heat over low heat for 5 to 6 minutes, or until fully warm. Remove from heat. Keep warm.
To assemble appetizer plates, on lettuce leaves, arrange 6 red bell pepper strips, 5 black olives, 3 mozzarella cubes, and 2 artichoke halves on each plate. Sprinkle with minced parsley.
Add 3 breast tenderloins and serve with 1/4 cup pizza sauce.
