Method
Make Tomato Bruschetta.
Combine plum tomatoes, garlic, olive oil, balsamic vinegar, 1/4 tsp salt, 1/4 tsp pepper, 1 Tbsp freshly chopped basil, and capers. Mix thoroughly and reserve for recipe.
Prepare french fries per package instructions and toss in a stainless steel bowl with remaining salt, grated Parmesan cheese, and parsley.
Place on appropriate plate. Top with 3 oz Tomato Bruschetta and shredded Parmesan cheese. Garnish with basil chiffonade.
