Italian Fritti
Create a delicious version of a Mediterranean favorite. Tangy bruschetta and Italian seasonings create a beautiful appetizer presentation. Buono appetito!

Ingredients
13-1/2 oz plum tomatoes, seeded, 3/4" dice
1 tsp garlic, chopped
2 fl oz olive oil
1 fl oz balsamic vinegar
1/4 tsp pepper
1/2 tsp salt
1 Tbsp basic, freshly chopped
1/4 tsp capers, fine, minced
7-1/2 oz Simplot Thin Cut French Fries
1/4 oz Parmesan cheese, grated
1 Tbsp parsley
1/4 oz Parmesan cheese, shredded
1 Tbsp basil, fresh, chiffonade

Method
Make Tomato Bruschetta.
 
Combine plum tomatoes, garlic, olive oil, balsamic vinegar, 1/4 tsp salt, 1/4 tsp pepper, 1 Tbsp freshly chopped basil, and capers. Mix thoroughly and reserve for recipe.
 
Prepare french fries per package instructions and toss in a stainless steel bowl with remaining salt, grated Parmesan cheese, and parsley.
 
Place on appropriate plate. Top with 3 oz Tomato Bruschetta and shredded Parmesan cheese. Garnish with basil chiffonade.
