Kai Yang with Khao Niao and Som Tam

Ingredients
3 lb chicken - cut in half
1 tsp salt
4 garlic chopped cloves
1 tsp white pepper
1 Tbsp minced cilantro/coriander leaves & root
2 Tbsp cognac, whisky, or rice wine
2 Tbsp coconut milk
1 Tbsp fish sauce (nam pla)
1 tsp chopped fresh ginger
2 Tbsp soy sauce

Method
Rub the entire chicken with the combined marinated ingredients and allow to marinate for 15 minutes.
 
Bake at 350 degrees F for 45 minutes and then broil/grill for 10 minutes until done. Cut into smaller pieces before serving. Serve with Sticky Rice and  Papaya Salad.
