Key Lime Cheesecake

With near "icon" status in the South, the tangy flavor and lime color make for a great St. Patrick's Day dessert.

	Ingredients 24 oz softened Philadelphia cream cheese 1/2 cup sugar 2 Tbsp fresh lime juice 1 tsp grated lime peel 1/2 tsp vanilla 2 eggs 1 ready-to-use graham cracker crumb crust (6 oz or 9") Shipped topping Lime slices

Method

Mix cream cheese, sugar, juice, peel and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended.

Pour into crust. Bake at 350 degrees F for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight.

Garnish with whipped topping and lime slices.
