Key Lime Pie With Coconut

Crust
3/4 cup crushed graham crackers
3/4 cup sweetened coconut
1/2 cup melted butter

Filling
4 egg yolks
1 cup lime juice
1 (14 oz) can sweetened condensed milk

Topping
1/2 pt cream, whipped
1/3 cup toasted coconut

Method

Preheat oven to 350 degrees F.

Mix crushed graham crackers and coconut together. Add melted butter and mix until well blended. Using fingers, press crust mixture into the bottom and up the sides of a 9-inch pie pan. Bake crust for about 6 minutes until set.

Beat egg yolks until foamy. Add lime juice and condensed milk and beat until well mixed. Pour mixture into crust and bake for twenty minutes. Cool completely. Top with whipped cream and sprinkle with toasted coconut.
