Langoustine Rockport

Langoustine Rockport

Broiled prawns served over capellini with saffron beurre blanc sauce.


Serves: 4

Ingredients

1 Tbsp Olive Oil
20 fresh prawns
2 garlic cloves, crushed
1 onion, chopped
1 green chili, deseeded and finely chopped
Salt and black pepper
1oz fresh coriander, chopped
2 limes, quartered

Method
Heat the oil on a large griddle or frying pan until very hot. Add the langoustine to the pan and fry stirring for 2 minutes. Add the remaining ingredients, including the quartered limes and season with salt and pepper. Continue to cook, stirring until the langoustines begin to color.
 
To serve, spoon over cooked capellini and top with Saffron Beurre Blanc sauce.
