Lemon Herb Sauce

Lemon Herb Sauce

Ingredients
4-1/2 oz butter
3 oz garlic cloves, minced
2-1/4 oz flour
9 cups milk, whole
3/4 cups lemon juice
6 Tbsp lemon zest, grated
1/4 cup thyme leaves, fresh, chopped
Salt and white pepper, as needed

Method
Melt butter in large saucepan over medium heat; add garlic and saute, stirring 2 minutes. Add flour, cook, stirring 2 minutes. Add milk; cook, stirring for approximately 10 minutes until thickened. Stir in juice, zest and thyme; cook, stirring 3 minutes. Season with salt and pepper. Cover and refrigerate until ready to use.
