Lemon Honey Squares

Lemon Honey Squares

Ingredients
1 tsp baking powder
3/4 cup butter or margarine
1/2 cup confectioners' sugar
2 Tbsp cornstarch
3 eggs
2 cups flour
3/4 cup honey
2 lemons, grated (rind and juice)
Dash salt
3/4 cup sugar

Method
Sift flour and confectioner's sugar. Blend in butter as for pie crust. Pat evenly in bottom of 9 x 13 - inch pan. Bake 20 minutes at 350 degrees F. Meanwhile, beat together eggs, sugar, honey, baking powder, cornstarch, salt and lemon rind and juice. Pour over baked crust. Return to oven for 25 to 30 minutes. Cool. Cut in squares. Serve with sherbet, if desired.
