Lemon Poppyseed Cake

Lemon Poppyseed Cake
An elegant, simple light dessert made with yellow cake, lemon extract and poppy seeds. Serve with a garnish of grated lemon or a lemon peel.

Serves: 64, 3x2-inch servings

Ingredients

5 lb (full box) Krusteaz Yellow Cake Mix
48 fl oz (6 cups) water, divided
1 fl oz (2 Tbsp) lemon extract
2 oz (6 Tbsp) poppy seeds

Method

Place 20 fl oz (2-1/2 cups) water in mixer bowl. Add Krusteaz Yellow Cake Mix. Using a paddle, mix on medium speed 3 minutes. Change to low speed and mix 1 minute while gradually adding balance of water. Scrape bowl and paddle.

Add lemon extract and poppy seeds. Mix on low speed 2 additional minutes. Place batter in prepared 24 x 16 x 1-inch pan.

For standard oven, bake at 350° F 25-30 minutes; for convection oven, bake at 300° F 25-30 minutes.
