Linguine with Ham

Linguine with Ham
A hearty original that is certain to be a favorite with your customers.

Serves: 4

Ingredients
1/4 lb Signature Linguine
1/4 lb spinach linguine
1 cup cream, light
2 egg yolks, well beaten
2 Tbsp butter, unsalted
1/2 lb Elite Cooked Ham, cubed
1 cup mushrooms, fresh, sliced
1/2 cup Parmesan cheese, grated

Method
Cook pasta in a large pan of boiling water 8-10 minutes, or until al dente. Drain and return to pan.
 
Combine cream and egg yolks in a bowl. Beat well. Add next 3 ingredients. Slowly stir egg mixture into linguine, mixing well. Add half the Parmesan cheese. Cook over medium heat until thickened, stirring gently. Serve with remaining Parmesan cheese.
