Lite Apricot Stuffing

Lite Apricot Stuffing

Ingredients

1 cup celery, sliced
3/4 cup onion, chopped
16 slices reduced-calorie bread, cubed and dried
2 Tbsp dried parsley
1-1/2 tsp poultry seasoning
1/2 tsp salt
1-1/2 cups turkey broth or reduced-sodium chicken bouillon
2 egg whites
1/4 cup dried apricots, chopped

Method

MICROWAVE DIRECTIONS:
In 1-quart microwave-safe bowl combine celery and onions; cover. Cook at HIGH (100% power) 2-1/2 to 3 minutes or until vegetables are tender, stirring halfway through cooking.

In large bowl combine celery/onion mixture, bread cubes, parsley, poultry seasoning, salt, turkey broth, egg whites and apricots. Spoon mixture into lightly greased 2-quart microwave safe casserole; cover. Microwave at HIGH (100% power) 7 minutes, turning halfway through cooking, or until stuffing is heated throughout.

CONVENTIONAL DIRECTIONS:
In small saucepan, over medium-high heat, combine celery, onions and turkey broth; bring to boil. Reduce heat to low, cover and simmer 5 minutes or until vegetables are tender.

In large bowl combine celery/onion mixture, bread cubes, parsley, poultry seasoning, salt, egg whites and apricots. Spoon into lightly greased 2-quart casserole; cover. Bake in oven last 1/2 hour of turkey roasting time.
