Method
Peel the carrots and then slice into 1/4-inch pieces. Place carrots in vegetable steamer, covered, over boiling water for about 10 minutes, or until tender but not mushy. Remove from heat and set aside. In a large saucepan, melt butter. Add maple syrup, orange juice, orange zest, steamed carrots, salt, pepper and nutmeg. Stir to coat the carrots and cook until heated through.
