Mexican Fiesta Salad

Ingredients

Lime-Ginger Vinaigrette
1 head Boston lettuce leaves, rinsed and crisped
2 oranges, peeled and cut into rounds
1 tomato, cut into rounds
1 red bell pepper, cut into strips
(1) 8-3/4 oz drained can kidney beans
1/2 cup Azarr lime and salt peanuts
1/4 cup thinly sliced green onions
2 Tbsp chopped cilantro
1 avocado

Method
Line serving platter with lettuce leaves. Toss remaining ingredients, except avocado, with lime and salt peanuts and dressing; arrange in center of serving platter.
 
Peel, pit and cut avocado into quarters; fan quarters and place on salad to serve. Serve with Lime-Ginger Vinaigrette.

Yields: 6 servings.
