Mexican Flan

Mexican Flan
Creamy, smooth, carmely and delicious. Luscious pudding served on carmalized sugar and chocolate sauce.

Serves: 4-6

Ingredients
1/2 cup sugar
15 oz sweetened milk
6 eggs
1 cup pecans, coarsley chopped
15 oz regular milk
1 tsp vanilla extract

Method

Caramelize sugar in a heavy skillet. Transfer while hot to the bottom of a buttered 1-1/2 quart casserole or mold, or to 4 to 6 individual baking dishes. Sprinkle pecans on top of caramelized sugar.

 

Blend remaining ingredients together in an electric blender; or whip the eggs first, then add both kinds of milk and vanilla. Pour gently into the prepared mod or dishes. Set the baking dish or dishes in a shallow layer of water in another pan.

 

Bake at 350 degrees for about 1 hour, until firm. Serve warm or cold on a dollup of chocolate sauce.
