Miniature Puff Shells

Miniature Puff Shells

Serves: 200

Ingredients
1 lb margarine or butter
1 qt water, boiling
1 lb 3 oz flour, all purpose
1 tsp salt
16 eggs (1 lb 12 oz)

Method
Melt margarine in boiling water. Add flour and salt all at once to boiling mixture. Beat vigorously. Remove from heat as soon as mixture leaves sides of pan. Transfer to mixing bowl. Cool slightly. Add eggs one at a time, beating on high speed after each addition.
 
Make bite-sized shells with pastry tube or No 100 dipper and place on greased baking sheet. Bake at 425 degrees F for 15 minutes. Reduce heat to 325 degrees F and bake 30 minutes longer.
 
Fill with chicken, fish or ham salad spreads.
 
Yields: approximately 200 puffs.
