Minted Sugar Peas With Red Peppers

Ingredients
2 lbs trimmed sugar snap peas
1 large red pepper, seeded and cut julienne
1 Tbsp butter
4 Tbsp chopped fresh mint
1/4 tsp black pepper

Method
Simmer peas in water in large saucepan until almost tender, about five minutes. Add red pepper to pan, cover and cook two or three minutes longer. Drain; keep warm.
 
Melt butter in large saucepan. Add mint and sauté two minutes, add peas and red pepper to butter. Toss well and season with black pepper. Serve immediately.
