Nutty Filets

Serves: 4

Ingredients
1/3 cup soy sauce
1/3 cup pineapple juice
3 Tbsp honey
3 Tbsp ketchup
1 tsp dijon mustard
3 Tbsp brown sugar
3 garlic cloves, chopped
2 Tbsp peanut butter
1 Tbsp plain peanuts, chopped fine
1/2 tsp chopped cilantro
1/8 tsp salt and pepper
4 filet mignon steaks, 1-1/2 inches thick

Method
Combine all ingredients except steaks into a saucepan and stir slowly as mixture reaches a boil. Cook and remove 1/4 cup and set aside.
 
Pour marinade over steaks and allow to sit for 30 to 40 minutes. Cook steaks to desired doneness.
 
To serve, place on a plate lined with leaf lettuce, sprinkle with peanuts and garnish with purple onion slices.
