Method
In each of 2 baking pans (12" x 20" x 4") mix 1-1/2 qts water, 1-1/4 cups margarine and 1-1/4 gals stuffing. Place chicken on stuffing mixture. Sprinkle with paprika.
Mix soup, milk and parsley. Pour half over each pan. Cover and bake at 400 degrees F. Bake until internal temperature is 165 degrees F or higher for 15 seconds and chicken is no longer pink, about 1-2/3 hours. Hold at 140 degrees F or higher. Portion stuffing using No. 6 scoop (3/4 cup).
Serve with 1 chicken breast half.
Yield: 40 servings (1 chicken breast half and 3/4 cup stuffing each).
