Orange and Fennel Autumn Salad

Ingredients

Salad
1 pkg (6 oz) prewashed fresh baby spinach leaves
3 cups torn radicchio
1 medium fennel bulb, cored and thinly sliced
3 Clementines or oranges, seeded, peeled and thinly sliced
1/2 cup California golden raisins

Dressing
1/3 cup mayonnaise
1/3 cup yogurt
2 Tbsp thawed frozen orange juice concentrate
1 Tbsp Pernod or thawed frozen orange juice concentrate

Method

In a straight sided, large glass compote or trifle bowl arrange the spinach, radicchio, fennel and oranges. Sprinkle with raisins and garnish with fennel fronds. Combine dressing ingredients and mix until smooth. Drizzle over salad or serve on the side.
